Madama Oliva Unveils ‘Lupamì’: Gourmet Lupins to Eat with the Skin

Italian canned food producer Madama Oliva has launched Lupamì, a new line of seasoned lupini beans designed to be eaten with the skin, in a move aimed at combining health-conscious food trends with fuller flavour profiles. The range marks the first time the company has dedicated an entire product line to the traditionally underappreciated legume.

The product line features 100% Italian-grown lupini beans, selected fresh ingredients, and an innovative production process that allows consumers to eat the beans without discarding the skin — a significant departure from traditional consumption practices.

Lupamì will be sold in 190g recyclable plastic packs that are resealable and reusable, aligning with the company’s broader sustainability goals. The range will launch in three flavour combinations: garlic and rosemary; balsamic vinegar; and chili with lime. All recipes feature only fresh ingredients, a choice the company says enhances both visual appeal and the intensity of flavour released in the brine.

Lupini beans, like olives, are natural, nutritious and suited to all-day consumption,” said Sabrina Mancini, marketing director at Madama Oliva. “But they also pose unique processing challenges. Being a potential allergen, lupini requires dedicated production facilities, and contains lupanine — an alkaloid that can be both bitter and toxic if not carefully managed.” According to the company, its proprietary processing technology allows for the safe retention of the skin by bringing lupanine levels well below the regulatory threshold. “Thanks to our standardised washing protocols, we consistently maintain levels between 15 and 30 parts per million — ten times lower than the maximum allowable limit,” Mancini said.

The launch is part of a broader innovation push by Madama Oliva, which produces more than 23 million packs annually across 20 production lines and exports to 45 countries. While olives remain its core business, the company has diversified into vegetable pâtés, sun-dried tomatoes, lupini beans, and other pickled vegetables and herbs.

At this year’s Tuttofood trade show in Milan (May 5 to 8), Madama Oliva will also unveil a packaging redesign for its 110g pâté range, alongside renewed presentations of its Happy Oliva and Vasi Special lines. These will feature within a new booth concept labelled “Grocery Innovation”.
